THE QUALITY

Sanitary and quality controls are two basis of our company’s plan, in every step of the process, from the livestock breeding and meat classification, to its elaboration, maduration, packaging and expending. This is a guarantee for the traceability “from the beginning to the final product”. Consorcio de Jabugo is also a guarantee and quality countermark for its own products and commercial brands: Iberibérico, Ibericolé, Delasierra, Sierra del Jamón.

The strict control of the raw material, the Iberian pig, is another main working pattern. Consorcio de Jabugo has created another society, Agropecuaria Sierramonte, S.A., which deals with the production and quality controls of Iberian pigs to supply the factory. Agropecuaria Sierramonte has several farms in Huelva, Sevilla and Badajoz provinces.

In the season 2000-01 this company has controlled 12,000 Iberian pigs and it is expected to reach an amount of 17.000 Iberian pigs in the season 2001-02. Full production of 20,000 Iberian Pigs a year will be achieved in the third year (season 2002/03).
